《2007中国餐饮产业运行报告》分析认为,2008年北京奥运会将给中国餐饮业带来200亿元人民币的巨大市场。北京奥运会期间餐饮业的商机主要来自奥运场馆、奥运村、媒体村等“奥运区域”的赛事餐饮和“非奥运区域”的休闲餐饮。在“奥运区域”的餐饮菜谱中,西餐将占70%,而中餐第一次占到30%的比重。这为拥有本土优势的众多中国餐饮企业,尤其是为北京市的餐饮企业提供了非常好的机会。北京奥组委提供的数据预测,“奥运区域”的餐饮服务将接待来自200多个国家和地区的28万左右的奥运会相关人员。在前后60天的时间内,需要提供大规模、多样化和高质量的餐饮服务。规模之大,历时之久,对于国内餐饮业都是史无前例的。
