From the first domestication of wild grasses grown in Crescent 10,000 years ago to their full potential nutritional value, cereal grains are still essential to modern human progress. Of the world’s 12 most important crops, there are five types of cereals - rice, wheat, corn, barley and sorghum - and only five account for more than half of the world’s caloric consumption. Science agencies are already beginning to understand the important role of cereals beyond heat energy. The importance of a balanced diet containing whole grains can not be overemphasized. Whole grains are a source of food carbohydrates, micronutrients and phytosterols. An example is the cereal aleurone, which is especially rich in many phytosterols and has potential antioxidant properties. Another example is the soluble and insoluble cell wall composition in the bran, which is an important source of dietary fiber. The scientific evidence that confirms the high prevalence and prevention of high-fiber and whole-grain foods in the literature is provided in the literature. Dietary factors are thought to affect the overall weight of a person and the general condition of the human body against disease. This conference will summarize the relationship of complex carbohydrates, whole grain products and prevent certain diseases including type 2 diabetes and coronary heart disease.
