莼羹,即用莼菜烹制的羹,滑爽脆嫩,是味道鲜美而高雅的菜肴。莼菜,是一种珍稀营养水生植物。又名水葵、锦带,俗名马蹄草。莼菜属睡莲科,多年生草本,生湖沼河流之浅水中。叶椭圆形,深绿色,浮于水面。嫩茎和叶背有胶状透明粘液,春月新叶,粘液尤多。春夏之间,采摘嫩叶供食。历代文人对莼菜推崇备至。早在二千多年前,我国人民就把莼菜作为席上珍馐。《诗·鲁颂·泮水》中有“思乐泮水,薄采其茆”的诗句。据孔颖达疏:“茆(读mao茅)……江南人谓之莼菜”。意为在泮水之
