目的分析四川省农村市场预包装食品钠含量及来源,为制订减盐(钠)措施提供参考依据。方法在2014年7-8月间,采用简单随机抽样方法在四川省随机抽取4个市(县),在其某乡镇上随机抽取1个小型超市和1个便利店,对食品标签信息进行拍照,采集预包装食品钠含量、营养素参考值百分比(NRV%)及来源,并对食品进行分级;采集市售价格,并计算最小份价格。结果低、中、高钠含量的食品分别占42.2%(116/275)、23.6%(65/275)、34.2%(94/275);中、高钠含量食品主要是肉蛋海产品类、谷类、豆及豆制品类、蔬菜水果类、薯类,且最小份价格低于5元的食品多于5元及以上的食品。钠的来源有食用盐、酱油、谷氨酸钠等调味料和含钠添加剂。结论 2014年四川省农村较高钠含量预包装食品为儿童青少年构建了一个有购买力的较高钠食品环境,可能是儿童青少年患高血压的危险因素之一,应推动和引导食品企业减少食品中钠含量。
Objective To analyze the sodium content and source of pre-packaged foods in rural areas of Sichuan Province, and provide a reference for formulating salt reduction (sodium) measures. Methods From July to August 2014, four cities (counties) were randomly selected in Sichuan Province by using a simple random sampling method. A small supermarket and a convenience store were randomly selected from a certain township to take pictures of food labeling information , Collect pre-packaged food sodium content, nutrient reference percentage (NRV%) and source, and food grade; collect the market price, and calculate the minimum price. Results The foods with low, medium and high sodium contents accounted for 42.2% (116/275), 23.6% (65/275) and 34.2% (94/275), respectively. The foods with medium and high sodium contents were mainly meat, eggs and seafood, Cereals, beans and soy products, fruits and vegetables, potatoes, and the minimum price of less than 5 yuan of food more than 5 yuan and above food. Sources of sodium are salt, soy sauce, sodium glutamate and other seasonings and sodium additives. Conclusions In 2014, the higher sodium content pre-packaged foods in rural areas of Sichuan province constructed a higher sodium food purchasing environment for children and adolescents, which may be one of the risk factors for hypertension in children and adolescents. It should promote and guide food enterprises to reduce food Sodium content.
