Protein non-enzymatic glycosylation refers to the process by which free amino groups in proteins and other macromolecules react with reducing sugars to form stable non-enzymatic glycated end products (AGEs) through a series of reactions. Overproduction of AGEs alters the physico-chemical properties and physiological functions of proteins, induces the expression of proinflammatory mediators and causes oxidative stress, causing cell damage, leading to a series of diseases such as diabetes and its complications. Blocking the formation of AGEs is expected to be a new way to improve chronic complications of diabetes. Natural products AGEs inhibitors, as important to improve diabetes and diabetes mellitus, have become the focus of research in recent years. The purpose of this article is to summarize the important role of AGEs in the complication of diabetes mellitus and to review the progress of the existing AGEs inhibitors and lysing agents. In this part, we will focus on the research progress of natural AGEs inhibitors in order to provide clues for finding natural medicines and health products with good application prospects.
