This article explores the key issues that need to be addressed when applying HACCP systems for cold-finishing cakes. Through the practical application analysis of HACCP system in cold processing of pastry processing, the key factors which need special attention are discussed, and the effective control measures of these key factors are proposed to ensure the effectiveness of cold processing of pastry processing HACCP system.
