利用蚕豆根尖微核技术可以研究大蒜对亚硝酸钠诱发蚕豆微核的抑制作用。在研究过程中发现,亚硝酸钠处理组与空白对照组相比,微核率明显增加,差异达到极显著水平(P<0.01)。亚硝酸钠+大蒜匀浆组与亚硝酸钠组相比,微核率明显降低,差异达到了极显著水平(P<0.01),说明大蒜对亚硝酸钠诱发的蚕豆根尖微核起到了显著的抑制作用。结果表明,在食用含亚硝酸钠食品的同时配合食用一定量的大蒜,就能减少亚硝酸钠对人体的危害。
Vicia faba root tip micronucleus can be used to study the inhibitory effect of garlic on the micronuclei of Vicia faba induced by sodium nitrite. In the course of the study, it was found that the micronucleus rate of sodium nitrite treatment group was significantly increased compared with the blank control group, the difference reached a significant level (P <0.01). The micronucleus rate of sodium nitrite + garlic homogenate group was significantly lower than that of sodium nitrite group (P <0.01), indicating that garlic played a significant role in sodium nitrite-induced Vicia faba root micronuclei Inhibition. The results showed that the consumption of sodium nitrite containing food at the same time with a certain amount of garlic, can reduce the harm of sodium nitrite on the human body.
