甲鱼有很高的营养及药用价值,历来是人们强身健体的大补之品。甲鱼的民间食用方法较单一,多为炖熟后饮汤食肉,许多有效的营养成份未能被人体充分利用。为此,国外十分重视对甲鱼系列保健食品的开发和研制,已经取得较大进展的国家是日本。近年来,在日本市场上不断地推出以甲鱼粉、甲鱼浸汁为主要原料,辅以其他调料或维生素而研制成功的新的甲鱼保健食品,其中较有代表性的品种有以下几种:
