3.3 沙 拉(Salad) 沙拉即凉拌菜,是欧美人民的传统菜肴,具有开胃、帮助消化、增进食欲的作用。 传统的沙拉是用蛋黄加新鲜蔬菜拌和沙拉油调味后制成的冷菜,现在沙拉的原料已十分广泛,各种新鲜蔬菜、水果(包括罐头)、粮食、干果、冻子、奶酪、火腿、禽蛋、肉类和海鲜等都是它的适应范围。沙拉可分为水果沙拉、素菜沙拉和荤菜沙拉三大类,前两种口味清淡爽口,调味汁新鲜,主要适用于作开胃菜或配菜,如:什锦沙拉、水果沙拉;后一种量大、营养丰富、蔬莱配备较多,常作为主菜,在午餐中服务,如:厨师沙拉、蟹肉沙拉等。
