利用玉米废醪板框过滤后得到的清液回用于全淀粉料的粉浆制备,并参与全淀粉液化、糖化、发酵过程。玉米清液可为酵母成长提供可靠的营养元素、营养盐等,不仅减少废水蒸发浓缩的负荷,还减少全淀粉粉浆拌料过程部分升温所需的一次水和蒸汽量。试验发现:用玉米清液配20%wt.全淀粉粉浆、温度87℃、淀粉酶25u/g淀粉、液化2h,此条件下得到液化醪的还原糖、粘度和DE值均相对较理想。采用同步糖化发酵,糖化酶添加量为160u/g淀粉;酵母生长良好,成熟醪蒸馏酒分13.7%v/v,液相(HPLC)酒份14.17%v/v,但是酸度和挥发酸也相对较高。
The filtrate obtained from the waste mash box of corn is used for the preparation of the whole starch slurry and is involved in the whole starch liquefaction, saccharification and fermentation processes. Corn serum can provide reliable nutrition elements, nutrients and the like for the growth of yeast, which not only reduces the load of evaporation and concentration of the wastewater, but also reduces the amount of water and steam required for the part of the whole starch slurry mixing process to heat up. The results showed that the reducing sugar, viscosity and DE value of liquefied mash were relatively ideal with 20% wt. Whole starch slurry, 87 ℃ temperature, 25u / g starch amylase and liquefaction for 2h. Using synchronous saccharification and fermentation, the amount of saccharifying enzyme added was 160u / g starch. The yeast grew well. The mature mash distilled 13.7% v / v and the liquid phase (HPLC) 14.17% v / v. Higher.
