花色素苷是存在于许多植物红、蓝、紫色素的母体色素,这些色素在食品品质、品性及植物生物学的化学分类标记中起着极为重要的作用。早期的研究者采用纸色谱的方法对花色素苷进行了研究。近些年来,随着高压液相色谱技术应用的发展,也同样被广泛的应用于花色素苷的定性与定量分析研究;相对于纸色谱法,高压液相色谱法具有快速、灵敏、高效兼具分析和制备等优点而广泛应用于食品品质测定分析的研究。
