  果实采后品质保持主要受制于两个因素,一是自身的衰老进程,而是病原菌引起的腐烂。衰老是果实生命中的一个重要阶段,直接影响果实抗性和品质。许多研究证明衰老是一个氧化现象,由活性氧(Reactive oxygen species,ROS)引起的线粒体氧化损伤是导致许多有机体衰老的重要诱因。
