Background (A)-Many researchers have indicated that ROS and lipid oxidation in food industry can be controlled or minimized,by the addition of commercial synthetic antioxidants or natural antioxidants.Recently,several studies have described the antioxidative activity of hydrolysates.However,little information about antioxidative peptide from ovalbumin was available until now.Objective-This work isolated the antioxidant activity of peptides from hydrolysates of ovalbumin.
